The Cheese Lover's 30-Day Cleanse

As so many of us often do, I have resolved to "clean up" my act for the new year.  In an attempt to rejuvenate and optimize my health, I am embarking on a 30 day food elimination plan which includes Renew Life's Organic Total Body Cleanse for 15 of those days to eliminate toxins.  It's not necessarily to lose weight or lower my BMI, but being a cheese and wine lover, I felt it was time to give my body a well deserved break.

The Plan:
I will be eliminating wheat, dairy, meat, alcohol, and caffeine while I am taking the Total Body Cleanse pills, then after 15 days, I will add wheat back into my diet then dairy, then meat and alcohol/caffeine.
 
I've found that Asian (including Indian) and Mexican foods are conducive to my 30-day cleanse.  Staying in and cooking is by far the easiest.  I was recently caught at a deli with no gluten free/vegan offerings, while my hubby sucked down a magnificent turkey sub with all the trimmings including peppercinis, I was stuck with a vegan bar, not fun!   Here's what I've been cooking and eating since January 1, 2011.

Smashed Black Bean Tacos w/Corn Salsa
Corn Salsa:  Add 1 can of drained and rinsed organic sweet corn into a bowl, add diced jalapeno, cilantro, tomato, red onion, lime juice, add a pinch of cayenne, coriander, and cumin, salt and pepper to taste.
Tacos:  Add 1 can of drained and rinsed organic black beans into a preheated skilled with olive oil, mash beans until they are crushed, add a clove of minced garlic (optional), cook until garlic is soft.  Heat corn tortillas until warm.  Place a mound of black beans on tortilla, add a scoop of corn salsa, shredded lettuce, diced avocados, squeeze of lime and your favorite hot sauce.



Rainbow Chard & White Bean Soup
Rinse 1 bunch of chard, remove the steam and dice leaves and stem.  Dice 1 carrot, 1/2 red onion, 1 clove of garlic.  Heat pot with olive oil, add diced carrot, onion, chard stems. saute until soft, add garlic, cook 4-5 minutes.  Add veggie broth, bay leaf, thyme cook 10 minutes.  Add chard leaves, and 1 can drained and rinsed white beans, cook 15 minutes.  To serve, add basil and a drizzle of olive oil.
